Spicy Shrimp & Pepper Stir Fry

This recipe is quick, easy and healthy. If you don't like seafood, substitute chicken (although the cooking time will be a little longer). Although there is a large amount of sambal oelek in this recipe, it really doesn't make it too hot. If you're sensitive to heat, adjust to your taste.

1 pound shrimp, peeled and deveined
2 tablespoons minced peeled fresh ginger
5 garlic cloves, minced
3 Tablespoons sambal oelek (ground fresh chile paste)
1 tablespoon dark sesame oil
½ medium red onion, thinly sliced
½ red pepper, thinly sliced
½ orange pepper, thinly sliced
3 tablespoons lower-sodium soy sauce
½ cup chopped fresh cilantro
2 tablespoons minced peeled fresh ginger
5 garlic cloves, minced
3 Tablespoons sambal oelek (ground fresh chile paste)
1 tablespoon dark sesame oil
½ medium red onion, thinly sliced
½ red pepper, thinly sliced
½ orange pepper, thinly sliced
3 tablespoons lower-sodium soy sauce
½ cup chopped fresh cilantro
1. Combine shrimp, ginger, garlic, and sambal oelek. Let sit at room temperature for 30 minutes.
2. Heat a wok or large skillet over high heat; add sesame oil to pan, swirling to coat. Add onions and peppers; stir-fry 3 minutes. Add shrimp; stir-fry 3 minutes. Stir in soy sauce; stir-fry 1 minute or until shrimp are done. Remove pan from heat; add cilantro and toss.
