Stuffed Bell Peppers with Sweet Potato Wild Rice

Our favorite stuffed peppers! The wild rice and egg are a delicious combination, and the sweet potato adds a wonderful, creamy sweetness. This recipe is a keeper!

3 red bell peppers
1 1/2 cups water
1 cup wild rice
2 1/4 c water
1 tsp beef base
1 small sweet potato, finely diced (skin on)
1 medium onion, finely diced
2 Tbsp coconut oil, divided
garlic salt to taste
2 or 3 dashes curry powder
dash cayenne pepper
6 eggs
Bring the water to a boil and add the rice, beef base and 1 Tbsp coconut oil. Stir together, turn heat to low, and cover with a tight-fitting lid. Simmer for 30 minutes, or until a small amount of water...
