1 tablespoon extra virgin olive oil
1/2 Large onion (chopped)
3 cloves garlic (minced)
1 Medium zucchini (peeled and sliced thinly)
1 Medium yellow squash (peeled and sliced thinly)
2 Medium tomatoes (washed and sliced thinly)
other vegetables of your choice (*potato, onion, eggplant, etc)
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning blend
2oz fresh parmigiana reggiano parmesan (grated)
