A creative summer salad, creating an alternative "cole-slaw" out of shredded sweet peppers rather than cabbage!

3 sweet peppers (tri colored)
10 oz baby spinach
3 whole segmented clementines
6oz plain coconut yogurt (I used So Delicious brand)
1/4 coconut milk (So Delicious)
1/4 coconut vinegar (Coconut secret brand)
1/8th cup coconut oil (Tropical Traditions)
juice of 1 clementine (2oz)
1/2 tsp salt
1/2 tsp finely ground black peppercorns
1/2 tsp fresh ground ginger
