It’s pumpkin season! Don’t throw your pumpkin seeds away. Make Sweetly Spiced Pumpkin Seed Butter instead. Full of healthy fat, fiber and flavor.

2-2 1/2 c fresh pumpkin/squash seeds with “pulp” (I used the seeds from 4 fruit total)
1/4 c kefir water
1 tsp rapadura (or other less-refined sugar)
1/4 tsp ginger
1/4 tsp fenugreek
Dash of black pepper
Dash of turmeric
Add seeds to the food processor. Blend until mostly smooth. Add the other ingredients and blend together until you have a smooth, homogenous spread. Depending upon your processor, it could take 5 minutes...
