Thai Lemon Shrimp - Gluten-Free

This delicious Thai inspired shrimp dish is perfect for a light dinner. And it's gluten-free!

1 pound raw shrimp, tail on, peeled and deveined
1/3 cup thai sweet chili sauce
1 lemon, the juice and the zest
the zest of 1 lime
1 teaspoon chili paste (like Sambal Oelek)
fish sauce to taste (not strictly SCD, use your best judgement)
3 cloves garlic, minced
1 teaspoon honey
1/4 cup coconut milk (the canned kind)
1/4 cup parsley, chopped
