Simple Caribbean Breakfast idea for the health conscious. From my beautiful isle of Trinidad where hops is a breakfast staple. Recommended side. Fresh tossed salad

1 Hops Bread Toasted- ( can be substituted for two regular slices of toast.)
1/4 carrot shredded
1 tbsp. olive oil
1/2 onion thinly sliced.
Small brown paper bag with a little flour and seasoned breadcrumbs
tbsp. mayo
Add the mayo to the shredded carrots and mix well then set aside. Warm olive oil in a saucepan. Add seasoned breadcrumbs to paper bag with flour and shake well. Add onion slices to bag with flour and seasoned breadcrumbs give a light shake. Remove onion slices and fry in in olive oil till crispy. Place carrot mix in hops bread and top with onion rings. Enjoy!!!
