A hearty vegan lunch or dinner recipe

• 1 cup French lentils, rinsed and picked over
• 4 cups water
• 1 bay leaf
• 1 clove garlic, finely minced
• ¼ cup carrot, peeled and finely chopped
• 2 celery ribs, finely chopped
• 2 Tbsp. red or yellow onion, finely minced
• 2 Tbsp. olive oil
• ½ tsp. ground turmeric
• 2 cups fresh spinach leaves, rinsed, stem removed, torn
• fresh nutmeg
• salt, to taste
