Vegan Kale Taco Salad

Healthy Taco Salad without the cheese and sour cream

1 cup Kale chopped (and stems removed)
1/4 red pepper chopped
1/4 cup cucumber chopped
chopped red onion to taste
1 small tomato chopped
1/4 cup cooked black beans
1 tablespoon organic pumpkin seeds
2 tablespoons jalapeno lime salsa
chopped cilantro to taste
Dressing
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
salt and pepper to taste
Put Kale in a large bowl. Add all your chopped veggies. Add beans, seeds, salsa, and cilantro. Whisk dressing and top salad as needed.
