A vegan alternative to a healthy morning scramble. Tofu and fresh veggies combine for a gluten free breakfast that can be made ahead of time to fit into a busy work week.

2 tablespoons avocado oil
1/4 cup nutritional yeast
1/2 teaspoon minced garlic
1/4 teaspoon turmeric
1/2 teaspoon cumin
1 package firm tofu (14 oz)

6 mushrooms, diced
1 small zucchini, diced
1 jalapeño, seeded and diced
