Vegetables Catfish Pot

Refined and yet simple-to-prepare dish for your next lunch or dinner...

1 lb catfish filets
2 onions (sliced)
1 bell pepper (sliced)
1 1/2 cups tomatoes (peeled and diced)
2 teaspoons garlic cloves (minced)
1 lemon (smaller, sliced)
1 cup white wine
3 tablespoons vegetable oil
to taste salt, pepper and oregano
1. Preheat oven to 200 degrees. 2. Pour the oil into a deeper baking dish and place the filets in one layer only. Cut them in half if necessary. Add salt and pepper to taste. Scatter the onions over the fish, than the peppers, the tomatoes, the garlic and put the lemon slices on the top. Add some more salt, pepper and oregano and pour the wine. 3. Bake for about 30 minutes, until it turns golden brown. 4. Serve hot with some salad, for example Color Explosion Salad (recipe below).
