Vegetarian Style Tamales – Black and Pinto beans, mixed with corn, mushrooms, brown rice, cilantro, green chilies and a wonderful blend of seasonings blend with a flavorful heap of masa and wrapped up in a corn husk turn into a perfect steamed creation!

Filling
2 cans black beans, drained, not rinsed
1 can pinto beans, drain, not rinsed
3 cups brown rice, cooked
2 (4 oz) cans green chilies
1 can corn, drained
1 white onion, diced
2 red peppers, chopped
1 orange pepper, chopped
1 bunch cilantro, chopped
4 oz mushrooms, chopped fine
2 Tbsp minced garlic
1 tsp salt
2 tsp black pepper
1 tsp cumin
Masa
2 lbs Masa Flour
3 Tbsp paprika
3 Tbsp salt
1 Tbsp cumin seeds
3 Tbsp Chili Powder
3 Tbsp garlic powder
2 cups corn oil
2 quarts vegetable broth
2 pkgs of corn shucks
