Veggie Fried Rice Vegan and Gluten Free

Easily customized to preferred tastes, Healthy, Vegan and Gluten free, super quick and easy Veggie Fried Rice! It’s also a perfect meal to make in advance or make extra and save the leftovers for lunch or dinner the next day!

4½ cups of instant minute rice
1½ cups chopped broccoli
15 large snow peas chopped
1 whole onion (I used a yellow one but whatever you like works)
2-3 small orange peppers
1½ cups chopped mushrooms
5-6 pieces of green scallions/green onions
? cup olive oil
3 Tbsp vegan butter ( I used earth balance)
Salt/Pepper to taste
Lemon juice (optional)
