Vivacious Vegan Microwave Cake

This cake was first made to honor my mums memory. She loved colors and she was very vivacious by nature .She loved to make colorful decorations for cakes. I made this cake for my father who is a vegan and a diabetic. He enjoyed the cake very much. Since making this it has become a hit among family and friends.

Almond flour-2 cups
Cornstarch-2 tbsps
Honey-1 cup
coconut sugar-1/4 cup
Vegetable oil-1/3 cup
White vinegar-1 tbsp
Apple sauce-1/2 cup
Baking powder-1 tsp
baking soda-3/4 tsp:
Vanilla essence-4 tsp
Water-1/4 cup or as needed
A little jam of your choice to help stick the marzipan.
FOR COVERING THE CAKE:
Almond Marzipan(egg free)
food colors of your choice
Take a microwave safe round cake pan,grease and keep aside. In a deep bowl,mix sugar ,honey and oil till very creamy.Add vinegar,apple sauce and essence and beat till lite. Sift in the flours,baking soda and baking powders and mix well till everything blends really well.At this stage use a bit of water if needed. Now,transfer this cake batter into prepared microwave baking pan. Microwave on high for 6 minutes or till done.My Microwave is of 1100 watts.Adjust the times as per your Microwave wattage.Meanwhile, to cover the cake,roll some of the almond marzipan into a round sheet,cover with a damp cloth and set aside till you are done with the fondant shapes. After the cake is done,let cool for 10-15 minutes. After the cake has completely cooled down,spread jam all over the cake,layer down the marzipan and stick the decorations of your choice,using jam.
