Watermelon Radish Chips

Part of the turnip family, watermelon radishes have a stunning pinkish red interior that makes them appealing and attractive. They are great sliced thinly in salads or for quick pickles but they also make a surprising and exotic appetizer. For these chips, I thin-sliced the radishes with a mandolin, but they are even better a little bit thicker. Though a mandolin makes this recipe easier, a sharp knife will do just fine.
