Whole Roasted Brown Trout

Simple and delicious though it looks fancy, this dish is perfect. Once cooked the skin comes right off and the meat is perfectly falkey and moist.

1 large whole trout, gutted and cleaned
1 tbsp olive oil
Salt & pepper
1 lemon, sliced
1 bunch fresh thyme
