This easy and quick meatless zucchini red bell pepper frittata combines eggs with zucchini, red bell pepper and onion to make a delicious dish for a healthy lunch option.

½ medium onion, chopped
1 large red bell pepper, chopped
1 large zucchini, diced (about 2 cups)
5 large eggs, lightly beaten
½ cup almond milk
¼ tsp red flakes peppers
1 tablespoon dried parsley
Salt and pepper
Optional: 1/4 cup freshly grated Parmesan
