Butternut Squash Salad

This is a wonderful Fall inspired salad, that is also healthy and delicious!

Dressing:
2 tablespoons olive oil
2 table spoons white whine vinegar
1 teaspoon oregano
a pinch of salt

Salad:
1 package spring mix greens
12 oz butternut squash (rosted or pre-cooked)
2 oz goat cheese
Pre-roast the butternut squash. Putt the greens in a bowl. Dress them with the salad dressing. Add the butternut squash to the greens. Sprinkle the goat cheese on top. Add more or less goat cheese...
