Grandma's stew

One of my favourite dishes my grandma used to cook... So simple to prepare and so delicious to eat!

1 onion (medium)
1 carrot (medium)
4 potatoes (medium)
3/4 cups short round rice
to taste salt, pepper, parsley
1 teaspoon red pepper powder
2 tablespoons oil
about 6 cups boiling water
3 pickled peppers
1. Preheat oven at 200 degrees. 2. Chop the onion. Slice the carrot. Peel and cut the potatoes into bite-sized pieces. Wash and drain rice with cold water. 3. Heat the oil a bit over a medium heat and add onion. Cook for a few minutes stirring occasionaly until it becames soft. Add carrots and cook for an extra minute. Add potatoes and cook stirring until they get a thin crust. 4. Add rice, salt, pepper and cook stirring for a minute or two. Than add parsley and red pepper powder , stir and pour boiling water right away so that the pepper powder doesn't burn. water level should be about a finger above the vegetables. Bring it to a boil and cook for 3-4 minutes and than put it into the oven on the lowest rack and bake for about 15 minutes. 5. Serve with fresh salad (fresh cabbage salad in my case). Bon appétit! Note: If you wish, you can put a few pickled whole peppers over the vegetables before you put the casserole into the oven. This will add an extra freshness to the dish.
