Apricot Chia Granola

I had way more time than anticipated today, as well as way more apricots. Free Time + Excess Apricots = Apricot Frenzy. I used my original granola recipe with a few adjustments. I omitted nuts and seeds, primarily because I don’t have that many to spare at the moment, and also because Josh (I’m going to start using his first name, my fiancé) hates them.

2-3 cups GF oats
1 cup dried diced apricots
1 cup unsweetened coconut
2 tbsp chia seeds
2 tbsp flax seeds
1/4th cup honey (sub maple to keep it vegan)
2 - 3 tbsp coconut oil
Added 1 tbsp brown sugar
4th cup dark chocolate chips

Preheat oven to 350 degrees, line and spray a baking sheet with nonstick oil.
Mix all ingredients (except chocolate) together in one bowl. Evenly disperse on the baking sheet. Bake for 10 - 15 minutes....
