This marinade lends itself perfectly to chicken due to its slightly salty ingredients which fill the cells of the meat so that when it cooks it releases the excess liquid, maintaining moist and tender meat.

2 tablespoons ginger root, grated
2 tablespoons garlic, minced
1/2 cup sweet chili sauce
1/4 cup oyster sauce
2 tablespoons hoisin sauce
3 tablespoons fish sauce, optional
1 cup soy sauce
1/4 cup lime juice
