Asparagus with Orange and Lemon Dressing

Refreshing, easy asparagus dish!

pound asparagus
1 small orange
1 tablespoon freshly squeezed lemon juice
2 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
Trim off tough ends of the asparagus, cut into 2 inches segments. Grate half of the orange peel, and zest some strips out of the other half. Cut the flesh into chunks. Put grated orange peel into a bowl, mix with lemon juice, olive oil, salt and pepper. Boil a pot of water, cook asparagus for about 3 minutes, drain. Place the asparagus on a serving plate, then pour sauce over the asparagus. Garnish with orange flesh and zest strips.
