Baked Eggplant with Almond Sauce

Simple baked eggplant with healthy ingredients.

1 eggplant
1 tablespoon olive oil
1 tablespoon almond butter
½ cup tomato, chopped.
3 cloves garlic, chopped.
1 teaspoon dried basil
2 tablespoon fresh basil, chopped.
Preheat oven to 350 degrees Fahrenheit. Peel the eggplant and cut into 1/4-inch thick slices. In a blender, mix olive oil, almond butter, tomato, garlic and dried basil. Oil a baking dish. Spread out the eggplant in one layer. Spread the sauce over the eggplant. Bake 25-30 minutes. Garnish with fresh basil
