Carrot, Cucumber and Daikon Salad

“Noodle” salad made from vegetables, with a fruit-based sauce.

1 medium carrot
1 small cucumber
1/2 daikon
½ cup chopped cantaloupe
¼ cup chopped tomatoes
2 tablespoon chopped walnut

¼ cup chopped tomatoes
2 tablespoon chopped walnut
Peel and cut daikon, carrot and cucumber into thin strips.
Put the daikon and carrot strips into boiling water and simmer for 5 minutes. (You can cook the cucumber too.)
Mix together the melon, tomato and walnut. This is the sauce.
Drain the daikon and carrot, and put together with cucumber on a plate. Pour the sauce over.
Note: Thinner strips cook more quickly. If you want to eat the daikon and carrot raw, just beware that daikon is a bit "spicy" in its raw form.
