Aunt Bee’s healthy Cheesy Turkey, Tomato and Zucchini Casserole is full of fresh Italian flavors for an easy dinner that the entire family can enjoy! The freezer-friendly one dish meal combines vegetables, lean protein, and brown rice in a simple and wholesome prep-ahead supper.

1 lb. ground turkey breast (you can substitute with an equal amount of ground chicken or ground beef, if preferred)
1 small onion, diced
1 tablespoon minced garlic
Salt and pepper, to taste
1 lb. zucchini (about 3 small), diced
1 cup cooked brown rice (I used a microwaveable cup of Minute Rice)
1 (14.5 ounce) can Italian-seasoned diced tomatoes, drained
1 tablespoon Italian seasoning
¼ cup grated Parmesan cheese
