Cinnamon-Vanilla Almond Butter

I love peanut butter, but sometimes I overdo it by eating it by the spoonfuls...Yep I'm one of those people... So, to control my nut-butter latenight eating frenzies I try not to keep PB in the house. Now almond butter is also good, but not an eat-by-the-spoonful kind of spread...I like it on apples, in celery, topped on a toasted english muffin, or with Ritz crackers. This is my favorite recipe for homemade almond butter and will satisfy your craving for peanut butter without overdoing it.

2 cups roasted almonds
1/2 tablespoon vanilla extract
1 tablespoon ground cinnamon
1 tablespoon olive oil
1/2 tablespoon vanilla extract

1 tablespoon olive oil
Place the almonds in the bowl of a food processor and process until finely ground.
Add the rest of the ingredients and blend for a few minutes at a time, making sure to scrape the sides of the food processor bowl frequently (if the mixture sticks).
Process for about 5-7 minutes, or until smooth and creamy.
Store in a closed jar or container. So easy and SO WORTH IT!
