Creamy Coconut Rice Pudding with a tropical kick - super easy to make, a real joy to eat and it’s vegan too! Maybe even better than the “original”?

1 can coconut milk (1 can = 440 ml)
¼ cup short grain white rice (¼ cup = 75g)
1 small pack vanilla sugar (1 small pack = 1/2 tsp vanilla powder/1 tsp vanilla extract and 1 tbsp sugar).
1 pinch of salt
1 anise star
¼ can pineapples or ¼ fresh pineapple (1 can = 440 ml)
Pour the coconut milk in a pot. Give it some heat - medium. Stir in the rice once the milk just starts to boil. Reduce the heat to low. Flavour things up with vanilla sugar, anise star and salt. Optional:...
