Crunchy Pear and Walnut Salad. A healthy, delicious mix of nuts, dried fruit, pear and fresh greens set this salad head and shoulders above the competition.

½ cup shelled walnuts
1 pear
½ cup dried dates/cranberries/raisins
4 cups rocket (arugula, rucola) or lamb’s lettuce (corn salad)
Juice of half an orange/1/8 cup orange juice
1 tbsp balsamic cream or vinegar
1 tbsp dijon mustard
1 tbsp olive oil
Salt and pepper to taste
Optional:
Serve with toasted wholemeal bread or baguette.
