Dairy-Free Cheesecake

Tastes Pretty good.

Filling
3/4s a medium firm tofu, cubed
2 cups softened vegan margerine
2 eggs
1 tbsp vanilla
1 tsp onion powder
1 cup of sugar
1 tsp salt
juice of one lemon

premade grahm crust

can of strawberry pie filling

Variations:
Sliced almonds and Rassberry pie filling on top

Chocolate crust w/ chocolate chips on top
Set oven to 320 degrees. Cut the tofu into cubes; use a blender or food processor to blend all ingredients except the pie filling and graham cracker pie crust, stir occasionally with long handled spoon. Scoop mixture into pre-made graham crust and bake 1 hour. Chill in fridge 1-10 hrs. Spoon pie filling over each piece before serving. **Variations: Sliced almonds and rassberry pie filling on top Chocolate crust w/ chocolate chips on top Healthier: Substitute 2 cups coconut oil and an extra teaspoon of salt for the margarine
