Endive, Cherry Tomatoes and Feta Cheese Salad

You will love this salad, it’s filled with a lot of tasty ingredients, you can eat it at lunch or dinner. It’s hearty, delicious and super easy to make and it’s ready in less than 20 minutes. The only thing that needs to be cooked is the chicken breast, the rest of the ingredients are raw.

1 endive, cut into thin slices
1 handful of mixed greens
7-8 cherry tomatoes, halved
1/2 a stalk of celery, sliced
1 slice of chicken breast, grilled
4-5 cubes of marinated feta cheese
1 tablespoon of fresh parsley, chopped
hemp seeds, for topping

Dressing:
1/2 a teaspoon of agave syrup
1 tablespoon of extra virgin olive oil
1/2 tablespoon of balsamic vinegar
salt and pepper to taste

8 ounces wide egg noodles
5 tablespoons butter (unsalted)
