Fresh and Healthy Gazpacho

An easy, 10-minute chilled soup is the perfect way to enjoy all of summer’s fresh produce. With just a quick whirl in the blender, you’ll have a healthy and refreshing bowl of Gazpacho ready for lunch, snack or dinner whenever you need it!

1 cucumber, sliced
½ red onion, chopped
1 bunch fresh parsley (stems removed)
1 red bell pepper, seeded and chopped
3 large tomatoes, seeded and chopped
2 cups tomato juice
2 tablespoons extra-virgin olive oil
¼ cup balsamic vinegar
1-2 cloves of garlic, minced
1 tablespoon honey
Juice from 1 lime
½ teaspoon salt
¼ teaspoon pepper
Place all ingredients in a high-speed blender or food processor and puree until just blended. Season with additional salt and pepper, to taste. Refrigerate until ready to serve. Serve cold.
