Fresh Tomato Sauce

This is a fresh, very easy and tasty tomato sauce for any kind of pasta.

1 yellow or white onion
2 cloves of fresh garlic
2 Tbsp Extra Virgin Olive Oil
6-8 Roma Tomatoes or 16 oz of Cherry or Grape tomatoes
3 Tbsp Italian Seasoning
Finely chop the onion and garlic. Finely dice the tomatoes, trying not to smash them while you are dicing. A great tomato knife would be very helpful. Heat oil in a skillet and sauté the onions and garlic, just until tender. Add the tomatoes to the onions and garlic and heat through. Do not over heat or the tomatoes will become soft and limp. Remove from heat and add the Italian Seasoning and gently mix. Serve over your favorite cooked pasta.
