A warm delicious tomato based soup filled with cabbage, sweet corn, celery, carrots, onions, and mushrooms. This garden vegetable soup is simple to make with easy to find ingredients, perfect for the cooler autumn weather.

2 tablespoons vegetable oil or olive oil

2/3 cup carrots, chopped

1/3 cup celery, chopped

2/3 cups vegetable or chicken broth

1 2/3 cups tomatoes, sliced or 1 – 14oz can diced tomatoes

2 cloves garlic, minced

2/3 cup onion, sliced

2 cups cabbage, chopped

1 cup mushrooms, sliced

1 cup corn kernels, fresh or frozen

1 cup vegetable or chicken broth

1 teaspoon dried thyme

¼ teaspoon dried oregano

¾ teaspoon salt

½ teaspoon sugar (optional)
