Ghirardelli Turtle Cheesecake Squares

A crumbly graham cracker, pecan-infused crust is topped with a generous layer of sweetened cream cheese and baked to absolute perfection. Then, it's stored in the refrigerator overnight to meld the flavors and refine the textures. For a wonderful finishing touch, it's drizzled in gooey caramel and melty chocolate chips, and sprinkled with chopped pecans.

Crust
2 1/2 c. crushed graham cracker crumbs
1/2 c. chopped pecans
1/2 c. sugar
1 stick butter ( melted )
1/2 c. Ghirardelli 60% Cacao Bittersweet Baking Chips ( for use just after crust is baked )
Cheesecake Filling
24 oz. cream cheese softened ( 3 blocks )
1/4 c. full fat sour cream
3/4 c. sugar
1 Tablespoon vanilla
3 large eggs
Topping
1 cup coarsely chopped pecans, (optional: toasted)
3/4 an 11-oz. bag of caramel bits or caramel squares
1 c. Ghirardelli 60% Cacao Bittersweet Baking Chips
2-4 T. Milk
