Gluten Free Oat Flour Chocolate Chip Cookies

Despite being gluten free, they still have that ooey-gooey chocolate, chewy base and are hard to stop eating after just one. Plus they have half the amount of sugar and fat that is used in traditional cookie recipes, so go ahead and enjoy a delicious treat without the guilt.

2 1/3 cup oat flour (I make my own by blending old fashioned rolled oats in a blender, to make sure it's gluten free use gluten free rolled oats)
1/2 tsp salt
1 tsp baking soda
6 tbsp brown sugar*
6 tbsp white sugar*
1/2 cup chocolate chips (Don't use chocolate chunks, it makes it harder to roll the cookies into balls, I would recommend cutting the chunks up into smaller pieces if that's all you have on hand)
2 tsp pure vanilla extract
2 tbsp canola, coconut or vegetable oil
2 tbsp unsweetened applesauce
3-6 tbsp milk of choice as needed until the batter reaches cookie dough form (I used unsweetened vanilla almond milk)
