Gluten Free Orange Coconut Oat Muffins

Naturally sweet, but with no sugar added, these gluten free orange coconut oat muffins are the great for any time of day. Snacking, breakfast, or post workout! Plus they take less than 30 minutes to make!

1 cup gluten free oat flour (or other flour of choice)
½ cup coconut flour
1 cup fresh orange juice
1 egg
1 tbsp melted coconut butter
½ to ? cup shredded coconut
¼ tsp Vanilla extract
¼ tsp coconut extract (optional)
1 tsp baking soda
3-4 tbsp vanilla protein of choice
dash of sea salt
1 tbsp corn starch or arrowroot starch
¼ cup cream (coconut or regular)

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
