Gourmet Toast with Pina Colada

For the Guacamole
- 2 Avocados from Mexico
- ½ cup of pineapple chunks (canned or fresh)
- 1 tbsp of Coconut Cream
- 2 tsp of salt
- ½ cup of red onions roughly chopped
- 1 tbsp of rum (optional)
- 1 jalapeno
- 1 habanero pepper (optional)
For the Toast
- 4 Slices of Toast
- Garlic to rub on the toast
- 1 tsp of unsalted, light butter (melted for 15 seconds).
- 1 Yellow or Orange Tomato (cut into long slices)
- 1 Plum Tomato (cut into long slices)
- 1 Avocado (cut into long slices)
- 1 cup of cashews, halved
- 1 tsp of freshly ground black pepper
- 1 tsp of dried oregano
- 2 tsp of capers (or to taste)

To Prepare the toast
