This recipe for grain free falafel burgers are not only healthy but packed with flavors of the Middle East that are great by themselves or layered in a fresh and homemade pita!

1 large bushel of parsley (about 2 cups non-chopped)
1/4 cup fresh mint
2 tbls lemon juice
2 tbls olive oil
1 flax egg (1 tbls flax seed + 3 tbls water) or regular egg
15 oz chickpeas, soaked and rinsed
1 cup white beans, soaked and rinsed
1 onion, roughly chopped
4 cloves garlic, minced
1 tbls cumin
1/2 tbls coriander
1 tbls sea salt
1/2 tsp cayenne
1 tsp smoked paprika
2 tsp baking powder
1 cup garbanzo bean flour
