Greek Salad is a quick and simple salad that's full of flavor and crunch. Greek Salad Ingredients are bright fresh and delicious. Pair this salad with leftover rotisserie chicken or seafood for a delicious and healthy meal!

Salad:
3 large tomatoes
1 large English cucumber
1/2 small red onion
1 large green bell pepper
1 cup kalamata olives
1 cup crumbled feta cheese
1 tbsp chopped fresh parsley
Salad Dressing:
1 clove garlic
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tsp dried oregano
1 tsp Dijon mustard
  • In a small jar combine all ingredients for the dressing and shake well, set aside.

My favorite omelette recipe has shallots, mushrooms, spinach, and Parmesan. All wrapped up in a perfectly cooked omelette. Does that sound good or what?

2 c baby spinach
1 shallot, chopped
1/4 c Parmesan cheese
For the omelette:
3 large eggs, whisked
1/2 Tbsp extra-virgin olive oil
1/2 Tbsp butter
salt and pepper - about 1/4 tsp each
