​Green Shakshuka with Whole Wheat Garlic Bread

A twist on the classic shakshuka - eggs baked on a bed of sauteed greens, with whole wheat garlic bread. Skip the bread for a keto-friendly, gluten-free, low-carb version.

4 tablespoons vegetable oil
4 garlic cloves ( minced )
1 yellow onion ( diced )
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 lb kale or collard green leaves
salt and pepper ( to taste )
pinch red pepper flakes
juice of 1/2 lemon
6 eggs
