Halibut Ceviche - Raw Food Heaven

What's better than a fresh fish dish filled with zingy citrus flavors, saucy spices and crunchy chips or crackers to serve them on? That's my Halibut Ceviche, and because it's "cooked" Raw, it has the added benefit of keeping all its nutrients and natural enzymes. Throw in the fact that this is low in calories, and you have a winner of a fish dish!

2 pounds of fresh halibut diced into 1 inch squares
6 ounces of finely diced sweet onions
6 ounces of finely diced Roma tomatoes, seeded
3 ounces chopped cilantro leaves for garnish
8 ounces of freshly squeezed lime juice
1 tablespoon white pepper
2 teaspoons salt
Spread out the freshly diced halibut in a large bowl. Cover the halibut with 6 out of the 8 ounces of the fresh squeezed lime juice, and toss it through evenly. Add the white pepper and salt and toss it...
