HARISSA TOMATO SAUCE

Harissa is a North African condiment that is full of flavour, yet simple and easy to make. Incorporate it into tomato soup with grilled cheeses, grill up some pitas to dip or make this the next time you whip up some cheese sitcks. You can make it as spicy as you like or keep mild...either way, you will love it!

3 large tomatoes (chopped)
6 cloves finely chopped garlic
1 medium onion (finely chopped)
1½ tsp whole cumin
¼ cup olive oil
2 tsp caraway seeds
¼ cup sambal (or as much as you dare)
1¼ tsp chili powder
1 lemon (juice and zest)
salt and pepper
-heat the cumin and caraway seeds in a dry pan until they're toasty, aromatic and just starting to smonke -add olive oil -add onions, garlic, sambal, chili powder and cook until translucent and fragrant...
