..Here is a delicious light italian caprese salad recipe! Perfect for a light healthy lunch or light dinner! It's a different way to serve it and I love it!

Ingredients ? (3-4 tomatoes)
3 tomatoes
4 oz soft mozzarella ball
1 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
Handful of fresh basil
Dash of salt and pepper

Instructions ?
Cut vertically into the tomatoes, making sure not to cut down through the bottom edge. Leave about a 1/2-inch of tomato flesh from the bottom of the tomato to the edge of the cut.
