Italian Marinated Chicken & Pineapple Kabobs

What a fun night eating outside on the deck/patio with these beautiful Italian Marinated Chicken & Pineapple Kabobs. The chicken is so tender and the gets a nice sweetness from the Peppers, Onions and Pineapple. Served over a bed of Brown Basmati Rice infused with fresh Ginger, Garlic and Cilantro. It is such a delicious dinner!

2, Large White Onions
2 Tablespoons, Fresh Rosemary, finely chopped
1 Teaspoon, Garlic Salt

1 Bottle, Italian Marinade * I used a Rosemary Balsamic Marinade

2 Cups, Brown Basmati Rice
5 Cups, Chicken Broth
1 Tablespoon, Fresh Ginger, minced
3, Fresh Garlic Cloves, minced
1 Tablespoon, Olive Oil
S&P
2 Tablespoons, Fresh Cilantro, chopped
1/2, Fresh Pineapple
2, Red Bell Peppers
2, Large White Onions
