Kale-Quinoa Salad (Vegan, Gluten-Free)

This healthy, kale-quinoa salad is so easy to make! It’s perfect for dinner parties or just an evening at home.

1/2 cup raw pine nuts
2 bunches fresh raw kale
1/2 cup golden raisins
3/4 cup cooked quinoa
5 tablespoons rice vinegar
2 tablespoons honey (I used agave syrup)
3 tablespoons olive oil
dash of salt
dash of freshly ground pepper
1 1/2 teaspoons dijon mustard
sugar, if needed
