A healthier play on lemon poppy seed muffins! This oatmeal has the creamy zing of lemon and vanilla, and all the benefits of a bowl of oatmeal. When you combine it with dripping sweet icing, you feel like you're eating dessert for breakfast!

For oatmeal:
2 1/2 cup oats (steel cut, instant, or traditional)
2 1/2 cups milk
2/3 cup of lemon juice
1 cup sugar
2 tsp vanilla extract
2 tsp poppy seeds
2 eggs

For Icing:
1 cup powdered sugar
1 Tbsp milk
