A heart-warming lentil salad with spiced pumpkin, topped with Balsamic Vinaigrette. Fast and easy to make. Very healthy and delicious

For The Salad
- 1/2 cup of uncooked lentils
- 1 cup of cubed pumpkins
- 3 cups of baby spinach
- 1 tsp of fresh lime juice
- 2 leaves of mint
For The Dressing
- 1 tsp of capers for topping the salad
- 2 tsp of sea salt
- 1 tsp of turmeric
- 1 tsp of dried oregano
- 1 tsp of freshly ground pepper
- 4 cups of water for boiling the lentils
- 2 tsp of extra virgin olive oil
- Romano cheese (optional)
