Macaroni and Veg. Dinner

This is a low calorie specialty that's quick and easy to make. It can be used alone or with 1 of these recommended sides: Fresh Salad Steamed Chicken Corn Potato Salad

1 pack macaroni,
1/2 carrot shredded
2 potatoes cubed
4 ochre thinly sliced - (easily substitute with a veg. of your choice.).
2 Tbsp. Olive oil
1/2 cup water
Highly recommend fresh seasonings finely chopped- thyme, ginger, chive, celery, onions., garlic
Boil the macaroni. and drain. Warm 1 tbsp. olive oil in a saucepan. saute half of the shredded carrots. Add the macaroni to the shredded carrots and toss. Add salt to taste while tossing, set aside when done.. In another saucepan warm 1tbsp. olive oil and add fresh seasonings saute gently. Add remainder of shredded carrots, ochre and potato and toss around in seasonings for about 1 minute. Pour in quarter cup water cover and let simmer. When all the water has dissolved add salt to taste., pour in remainder of water , cover and leave to simmer. Cook till potatoes are tender and all water is dissolved.
