mango-licious salmon tacos
Summer is here and mangos are fresh in season, why not put a twist on your fish tacos? It's savory salmon with a twist of sweet and juicy mangos! enjoy!

Ingredients ?
1 ripe mango, cut into small cubes
1 ripe avocado, cut into small cubes
1/3c red onion, diced
1/2c cilantro, chopped
1 can black beans, rinsed and drained
Juice of half a lime (reserve the rest for salmon)
salt to taste
8-12 wheat tortillas
For Salmon ?
1lb salmon fillet, skin removed
1t adobo sauce (from a can of chipotles in adobo)
1t honey
Juice of half a lime
salt and pepper
For Serving ?
Cotija cheese, Cacique brand crumbled http://caciqueinc.com/

Instructions ?
In a bowl, combine all of the salsa ingredients and gently fold together, being careful not to mash the avocado. Refrigerate until ready to assemble.
