Crispy pan-fried seitan tossed in a sweet and spicy ginger soy sauce. This is a meatless version of the PF Chang's classic, with 29 grams of protein per serving.

2 tsp vegetable oil
1/2 tsp minced or grated ginger
3 cloves minced or grated garlic
1/3 tsp red pepper flakes
1/2 cup low-sodium soy sauce
1/2 cup coconut sugar
2 tsp cornstarch
